California Zucchini Bake

1lb. Lean Ground Beef
3 Medium Zucchini, thinly sliced
1/4 cup Green onions, sliced with tops
2 tsp. Salt
1/4 Garlic Powder
2 tsp. Chili Powder
1 can Green Chilis, chopped (7 oz.)
3 cups Rice, cooked
2 cups Sour Cream
2 cups Monterey Jack Cheese, grated 
1 large tomato, sliced
Salt & Pepper

Saute beef, zucchini, onions and seasonings in a lightly greased skillet until meat is no longer pink and veggies are tender & crisp, stirring frequently.  Sometimes I will brown the meat half way so that my veggies stay crisp...Add green chiles, rice, sour cream, and a cup of cheese...Turn into a shallow 2-quart casserole...
Arrange tomato slices on top...Season with salt & pepper...Top with remaining cheese...Bake @ 350 for 20-25 min...
(My husband like everything spicy so I added Jalapenos to one side)

I made this tonight...YUM!  I'm not a cook, but I follow directions well...If you make it, let me know if you like it...My mother in law made it all the time for my husband and he loves it...ENJOY!
